Fast Food Burger Wars

What's with everyone trying to be like McDonald's? Upon the release of Supersize Me, it seemed like the thing to do was go organic and boycott the global burger giant. People went into panic mode when they saw what eating Mac D's for a month straight could do to the human body. No shit? Now with all that in the past, it seems the big burger chains like: Jack N' The Box, Carl's Jr. and Burger King have all made their attempts at duplicating the Big Mac in one form or another. It's tough to beat the king. If you can't beat them, you can always join them. So we did too. Over the last couple weeks we have duplicated some of our favorite fast food burgers. Here's our take on the Big Mac, The "Big Ted" Photobucket

Thomas Keller Book Signing on Montana Ave.

On November 8th, it was our pleasure to meet and serve, Chef Thomas Keller our Turkey Club, of all things. He is the world renowned chef and owner of the French Laundry in Napa and Bouchon in Las Vegas and Beverly Hills. He was signing his new book, Ad Hoc At Home: Family Style Recipes, at Williams Sonoma, up the street from us. This cook book is not only informative but tells great stories and looks great on any coffee table. The food that Thomas Keller teaches in his new book is very similar to our cuisine. It's classic American with a fresh new spin on things. The recipes are not too challenging and the ones we have tried are very fun and creative. Try this one...

Crab Cakes
1 1/2 Tsp Unsalted Butter
2 Tbsp finely diced red bell pepper
1 garlic clove chopped
2 Tbsp of finely diced white onion
1 1/2 Lbs. Dungeness Crab
1 Tsp of Worcestershire Sauce
1 Tsp of Dijon Mustard
1/4 cup of aoli
1 Tsp of Italian Parsely chopped Fine
1 Tsp Old Bay Seasoning
1Tsp Kosher Salt
1 Tbsp fresh lemon juice
2 1/2 cups of Panko
1 Lrg egg

Intructions:
Sautee peppers, garlic and onions in the butter until they are tender. Let cool, and begin to whisk eggs seperately in a bowl, add 1/2 cup of panko, the cooled sauteed veggies, worcesteshire, dijon, aoli, parsely, old bay, salt lemon juice and the crab. Form into cakes and cover in panko. Seared the Crab cakes in vegetable oil in a non stick pan on each side and finish in the oven until cooked through.

I appreciate Mr. Keller taking the time to speak with me and can't wait to visit his famed Napa restaurant, French Laundry, in the near future.
